Todays menu: Buffalo Chicken dip & Mockaritas!

It is true that one of my favorite things is making something delicious and watching you enjoy it! This recipe is smash hit every time we make it for Wesley Hour. When you walk into the house and this is in the crockpot it is mouth watering inducing! I am so pumped for you to be able to make this at your house and share it with your people.

Buffalo Chicken Dip – or as we lovingly call it, “Chicky Dip”

Here is what you need:

  • 3 cans chunk chicken drained. 9.75 ounces (can also pull a rotisserie chicken or use leftovers!)
  • 2 packages cream cheese softened
  • 1 cup Ranch dressing
  • 3/4 cup pepper sauce – I think Frank’s Red Hot is the best.
  • 1 1/2 cups shredded sharp cheddar cheese
  • Things to dip – Tortilla chips, peppers, carrots, celery…really whatever you like!

What to do:

  • Heat chicken and hot sauce in a skillet over medium heat, until heated.
  • Stir in cream cheese and ranch dressing. Keep the heat on and keep stirring until that cheese is smooth and melty, and warm.
  • Mix in half of the shredded cheese. At this point I like to taste it and see if I like it…sometimes I add more hot sauce!
  • Transfer the mixture to a slow cooker. (or a casserole dish to pop in the oven)
  • Sprinkle the remaining cheese over the top, cover, and cook on med. setting until hot and bubbly. If cooking in the oven, add to a 450-degree oven for 10-15 minutes.
  • Serve with the dippers you have!


It’s true that there are a ton of of versions of a mockarita…this one is easy and tasty.

Here is what you need:

  • 2 limes (cut into wedges)
  • 1/2 cup lime sparkling water (orange is good too)
  • 2 cups limeade
  • 2/4 cup orange juice
  • If this isn’t sweet enough for you, you can 1/4 c simple syrup just boil equal parts water and sugar till sugar dissolves.
  • kosher salt for rimming your glass, if you feel fancy.

What to do:

  • add limeade, OJ, sparkling water, and simple syrup together and mix. (I’m not gonna lie, I really taste it here and add whatever I think it needs…sometimes I squeeze a bunch of fresh lime in.)
  • run a lime wedge along the rim of your glass.
  • dip top rim in a saucer of kosher salt.
  • add ice to the cup, squeeze in another lime wedge
  • pour, sip, enjoy!
